This delicious seafood fried rice combines prawns and tuna with a variety of vegetables, creating a flavorful and satisfying dish that can be prepared with ingredients you likely have on hand.
Heat the oil in a wok over medium heat.
Add the chopped onion, chilli flakes, garlic, and ginger to the wok. Stir-fry for 1-2 minutes until fragrant.
Add the red pepper to the wok and continue to stir-fry for 4-5 minutes.
Stir in the cauliflower rice and cook for a couple more minutes.
Add the prawns, tuna, fish sauce, and Chinese vegetables or cabbage to the wok. Stir well to combine.
If using fresh prawns, cook them until they turn pink before adding the other ingredients.
Clear a hollow in the center of the wok and pour in the beaten eggs. Scramble them gently, stirring through the rice mixture.
Season the dish to taste and garnish with torn coriander before serving.
