Hearty, juicy vegetable fritters made from zucchini, carrots and potatoes, easy to prepare and versatile as a main dish, snack or side.
Peel the carrots, potato and onion and coarsely grate them. Also coarsely grate the zucchini using a grater. Place the vegetables in a bowl and add salt. Let sit for 10 minutes, then squeeze out the liquid thoroughly with a kitchen towel.
Mix the vegetables with corn, egg, flour and breadcrumbs, and season the mixture with salt and pepper. Form patties with slightly damp hands.
Heat oil in a pan and fry the vegetable fritters over medium heat for 4–5 minutes per side until crisp.
